Vanilla Apple Cake.

A box of Apples was a very recent purchase at a very good price. I mainly bought them so I could have a store of frozen apples in the freezer, ready to use. But there was nearly a 100 apples in the box, far too many for my already bursting at the seams freezer.
So, off I went searching the blogs for some nice recipes using apples. And found this on Rosie's blog. http://rosiebakesapeaceofcake.blogspot.com
I made a couple of changes, ie: had no Demerara sugar, so used raw instead. And used some of the partially cooked apples instead of raw apples. For the topping, I used raw sugar and mixed spice instead of the cinnamon.
This cake is moist, sweet, fruity and a keeper. I shall make this often, there's only one small slice left.
Thank you Rosie.

Beauty tip number 1

Straight from the mouths of babes. Spread cream, (any cream) all over the face, trying not to get it into the hair, then try kissing everybody in sight.

What fun we had yesterday, my dear sweet

grandchild came for afternoon tea.
I came across a long forgotten favorite of mine from my local bakers. Must be at least twenty years since I have had a CREAM BUN.
The bun itself is very much like a Hot Cross Bun, but instead of the cross, it is split almost to the bottom and filled with artificial cream, and then a good dollop of raspberry jam in the middle. Finished off with a dusting of icing sugar.
Yes, we managed to finish all six of them and then proceeded to make a big sticky mess of every bodies face with a hug and kisses. Me included. (No, you are not seeing the photo's of that)
Yes, I know I could have made them myself,
but the weather is so warm here at the moment
(correction HOT) that I am not putting that oven
on until it gets a lot cooler.

Christmas Lights Fruit Cake.

Not too much effort put into this cake, as I am making a white chocolate mud cake for Christmas. So this is a shop bought cake by Fowlers Vacola. A deliciously moist fruit cake filled with Spiced Apples, Apricots, Peaches and Pears. I glazed it with warmed Apricot jam and decorated with glazed Oranges, glazed Pineapple, glazed Peaches and a green Cherry.
Now to get on with the over cake.

Lemon Butter Cake.

This cake is so delicious, that it deserves two pictures. And if you make it, I am sure you will not stop at one slice only. I didn't.

Lemon butter cake has got to be the easiest and quickest cake to make. From heating the oven to tasting was exactly 40 minutes. So ideal to make when you have guests coming and want a quick cake.

You will need....

250g BUTTER.

250g SOFT BROWN SUGAR.

250g S.R.FLOUR (sifted)

3 EGGS (beaten)

1 LEMON.

Method....

Melt butter in microwave on 50% power.

Stir in sugar, then the flour, add the eggs
and the zest from the lemon. (Keep the juice from lemon for later)
Pour into a shallow tin which you have greased or lined with parchment paper. And bake in oven at 180c for approx 20 - 30 minutes.
Mix juice from lemon with enough caster sugar to form a paste, and spread on cake while still hot from oven.

As I have only two slices left of this delicious cake, I shall be making it again at the weekend. I wonder what it would be like with orange, instead of lemon. Hmmmmm.
