Yesterday, I had a complete disaster in the kitchen. I followed a new recipe from a little book I had got from the supermarket. On the cover, it said that all recipes had been tested three times. It looked easy enough and sounded delicious. But the cake did not rise at all, thinking that it would be alright, I carried on with making this super icing using the very best of chocolates. Then that did not set! So the lot went into the rubbish bin.
A bit fed up at this stage, as you can imagine. Today I went back to the supermarket and bought a packet cake mix. Vanilla Butter cake, No Name brand. Shock, horror! Have you ever used them? I got quite a surprise, add two eggs, milk and butter, and mix for three minutes.
I greased a tin and put a thick layer of Roses marmalade in the bottom. On went the cake mix and into the oven. This is the end result. We had it after dinner tonight with some lovely creamy custard. Amazingly good.
What am I saying here? These are good for people like me who have a disaster in the kitchen or simply lose their cooking mojo. Next time I am in the supermarket, I shall stock up on these I think. (There's one in chocolate, Yippee)
It might look ugly but it sure tastes good!

I see you are playing on your lovely new blog.:) I have never used a cake mix but this is tempting me. Very handy when you can't be bothered.
Oh yum! I've never thought to use marmalade and put it down before you pour the batter in. Sounds great! I'm going to give this a try.
I've used lots of cake mixes. In fact I have a cook book called the Cake Mix Doctor. All cakes start with the box mix but they sure don't taste like it when they are finished!

I haven't used a packet mix since I was a kid baking with my mum (it was the only baking we did!). Your cake looks gorgeous Sal, I love the idea of adding the marmalade.

I have never used a cake mix but hey I don't knock it - it's like puff pastry I never make my own anymore always shop brought.

I just wanted to let you know that I was looking for a barm brack recipe online yesterday to make for St Pat's Day and came across yours. I made it last night to bring in to work for a shared lunch - and it was a great success!! Moist, marmaladey, delicious! Much nicer than my vague memories of the barm bracks my mother made when I was a child.

One of my most favourite cakes is an American cake mix called funfetti cake - I usually buy it off Ebay!
It's fantastic!
