Lemon Butter Cake.


This cake is so delicious, that it deserves two pictures. And if you make it, I am sure you will not stop at one slice only. I didn't.

Lemon butter cake has got to be the easiest and quickest cake to make. From heating the oven to tasting was exactly 40 minutes. So ideal to make when you have guests coming and want a quick cake.

You will need....




250g BUTTER.

250g SOFT BROWN SUGAR.

250g S.R.FLOUR (sifted)

3 EGGS (beaten)

1 LEMON.


Method....


Melt butter in microwave on 50% power.

Stir in sugar, then the flour, add the eggs
and the zest from the lemon. (Keep the juice from lemon for later)
Pour into a shallow tin which you have greased or lined with parchment paper. And bake in oven at 180c for approx 20 - 30 minutes.
Mix juice from lemon with enough caster sugar to form a paste, and spread on cake while still hot from oven.

As I have only two slices left of this delicious cake, I shall be making it again at the weekend. I wonder what it would be like with orange, instead of lemon. Hmmmmm.

Ohoh OHHH please do try the orange version Hottie:) While I am usually a lemon/lime girl, there is something from my childhood that has me hooked on orangey flavours in cakes:) Hmm, maybe I should do my own orange version?:) Do you think it keeps well or is best on the day it's made please?

Coby, I tried it while it was still a little warm from the oven, BEST YUMMMMMY ever, then I tried it again some hours later, still very YUMMMMY. Next day there was only 2 slices left, yes it was still very yummmy. Sadly, I can't say anymore, as there's none left. However, tis weekend, I am making it again, one orange, and one lemon and lime, thanks to you. LOL.:)

Could we put the lemon juice and caster sugar when we stir in the sugar, flour, and add eggs and zest from lemon? My folks don't like frosting on cakes....

Yes you could put the lemon juice in the cake, but not the extra sugar. It would be far too sweet.

Hi Sally,
This cake looks really delicious but that is a lot of butter!
I use a sponge topping for fruit with the same ingredients but the butter is only half, could this work out the same?
